3-LAYER CHOCOLATE SQUARES

aka Aunt Marlene Bars

Ingredients:

  • ½ cup margarine
  • ¼ cup cocoa
  • ½ cup sifted powdered sugar
  • 1 egg, beaten
  • 2 tsp vanilla
  • 3 cups graham cracker crumbs
  • ¼ cup margarine
  • 1 tsp cornstarch
  • 2 tsp sugar
  • 3 tbsp light cream
  • 1 tsp vanilla
  • 2 cups sifted powdered sugar
  • 1 large Hershey bar

Putting it together:

Melt ½ cup margarine. Add one at a time; cocoa, powdered sugar, egg, vanilla and crumbs. Stir after each addition. Press into a 13X9X2 pan.

Melt ¼ cup margarine. Combine cornstarch & 2 tsp sugar - add to oleo & blend thoroughly. Add cream; cook, stirring constantly, till thick & smooth. Cool; add 1 tsp vanilla & 2 cups powdered sugar. Blend well & spread over first layer. This is a stiff mixture; drop by tsp & spread carefully. Melt chocolate bar & spread over cream filling.

Apple Brickle Dip

Ingredients:

  • 1 pkg (80z) cream cheese, softened
  • ½ cup packed brown sugar
  • ¼ cup sugar
  • 1 tsp vanilla
  • 1 pkg almond brickle chips (7-1/2 oz) or English toffee bits (10 oz)
  • 3 medium tart apples, cut into chunks

Putting it together:

In a mixing bowl, beat cream cheese, sugars and vanilla. Fold in chips. Serve with apples. Refrigerate any leftovers. Yield: 2 cups

APPLE HARVEST CAKE

Ingredients:

  • 1½ cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 3 large ripe bananas, mashed
  • ¼ cup sugar
  • 1 egg, lightly beaten
  • 1/3 cup margarine, melted
    TOPPING
  • 1/3 cup packed brown sugar
  • 1 tbsp all purpose flour
  • 1/8 tsp cinnamon
  • 1 tbsp margarine

Putting it together:

In a large bowl, combine dry ingredients. Combine bananas, sugar, egg and margarine; mix well. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full. Combine the first three topping ingredients; cut in margarine till crumbly. Sprinkle over muffins. Bake at 375 degrees for 18-20 minutes or till muffins test done. Cool in pan 10 minutes before removing to a wire rack. Yield: about 1 dozen.

APPLESAUCE CAKE

Grandma Hammes (Grandpa's mother)

Ingredients:

  • 3 cups sifted flour
  • 1½ tsp soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 cup oleo
  • 1½ cups sugar
  • 2 eggs
  • 2 cups applesauce
  • 1 cup raisins

Putting it together:

Sift dry ingredients together. Cream oleo with sugar till light & fluffy. Add eggs, one at a time. Add dry ingredients, applesauce & raisins. Bake at 350 degrees, till cake tests done. 9X13 pan.

AU GRATIN POTATOES

Ingredients:

  • 3 tbsp margarine
  • 3 tbsp flour
  • 1½ tsp salt
  • 1/8 tsp pepper
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 5 cups thinly sliced peeled potatoes
  • ½ cup chopped onion

Putting it together:

In a large saucepan, melt marg over low heat. Stir in the flour, salt and pepper till smooth. Gradually add milk. Bring to a boil; cook and stir for 2 mins or till thickened. Remove from heat; add potatoes & onion; stir well. Put in greased 2 qt.baking dish. Cover & bake at 350 for 1 hour. Uncover; bake 30-40 mins. Longer or till potatoes are tender. YIELD: 6-8 servings.

BAKED BEANS CASSEROLE

Ingredients:

  • 1 can lima beans (drained)
  • 1 can kidney beans (drained)
  • 1 can pork & beans (drained)
  • Mix together above ingredients.

Brown ½ lb hamburger. Add to beans.

    SAUCE
  • 1 tbsp prepared mustard
  • ½ cup catsup
  • 2 tbsp vinegar
  • 4 tbsp molasses
  • ½ cup brown sugar
  • sprinkle of salt

Putting it together:

Add to beans in large casserole. Bake 350 degrees for 30 minutes.

Ingredients:

  • 1-2/3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup packed brown sugar
  • ½ cup water
  • 1/3 cup mashed ripe banana (about 1 small)
  • 1/3 cup vegetable oil
  • ½ tsp vanilla
  • Confectioners' sugar

Putting it together:

In a large bowl, combine flour and baking soda. In another bowl, whisk the brown sugar, water, banana, oil and vanilla. Stir into dry ingredients just till moistened. Transfer to a greased 8-in. square baking dish. Bake at 350 degrees for 30-35 minutes or till a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar. Cut into squares. Editor's Note: This recipe does not use eggs.

BEST CAKE BROWNIES

Ingredients:

  • ½ cup margarine, softened
  • 1 cup sugar
  • 4 eggs
  • 1 can (16 oz) chocolate syrup
  • 1 tsp vanilla
  • 1 cup flour
  • ½ tsp salt
    GLAZE
  • 1 cup sugar
  • 1/3 cup margarine
  • 1/3 cup milk
  • 2/3 cup semisweet chocolate chips
  • 2/3 cup miniature marshmallows

Putting it together:

Cream margarine & sugar. Add eggs, one at a time, beating well after each addition. Beat in chocolate syrup & vanilla. Add the flour & salt till blended. Pour into a greased 15X10X1- inch baking pan. Bake at 350 degrees for 20-25 minutes or till a toothpick inserted near the center comes out clean (top of brownies will still appear wet.) Cool for 15-20 minutes. Meanwhile, in a small saucepan, combine sugar, margarine and milk. Bring to a boil; boil till the sugar is dissolved. Remove from the heat; stir in chocolate chips & marshmallows till melted. Pour over the brownies & spread evenly. Refrigerate for 5 minutes before cutting.

BISHOP'S CHOCOLATE PIE

Found in a newspaper

Ingredients:

  • 2 packages instant vanilla pudding
  • 2 packages instant chocolate pudding
  • 4 cups milk
  • 4 cups softened vanilla ice cream

Putting it together:

Mix milk and puddings and beat well. Add ice cream. Pour into two pie shells. Cover with cool-whip. Take a large-sized Hershey chocolate bar and make chocolate curls to cover the top. Refrigerate. Makes two pies.

BLACK BOTTOM CAKE

My mother's recipe - a favorite of the whole family.

Ingredients:

  • 1 cup flour
  • ¼ cup sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • 3 tbsp melted butter
  • 2 tbsp cocoa

Putting it together:

Sift together flour, sugar, baking powder and salt. Add milk, butter & cocoa. Pour into buttered 8X8X2 pan.

    Mix together:
  • ½ cup white sugar
  • ½ cup brown sugar
  • 2 tbsp cocoa

Sprinkle over batter. Then add 1 cup boiling water. Bake in 375 degree oven for about 30 minutes.

BLUEBERRY BUTTERMILK PANCAKES

Craig and Mary's recipe - very good.

Ingredients:

  • 1¼ cups oatmeal (not instant)
  • 2 cups buttermilk
  • 2 eggs, well beaten
  • 1 cup flour
  • 1 tbsp sugar
  • 1 tsp baking soda
  • ¼ cup butter, melted
  • ½ cup blueberries

Putting it together:

Mix oatmeal & buttermilk. Add eggs. Combine dry ingredients & mix them into oatmeal mixture. Stir in butter - batter is ready to pour on griddle. Cook on a hot griddle, adding blueberries as desired. Flip and cook other side till golden brown. Makes 12 pancakes.

BROWN SUGAR OATMEAL PANCAKES

My recipe - a family favorite.

Ingredients:

  • 1 egg, beaten
  • 2 tbsp vegetable oil
  • 1 cup buttermilk
  • ½ cup whole wheat flour
  • ½ cup white flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1/3 cup packed brown sugar
  • ½ cup plus 2 tbsp quick oats

Putting it together:

Combine egg, oil and buttermilk. Combine next 5 ingredients; add to egg mixture. Stir in oats. Pour by &frac13 cupfuls onto a hot griddle; turn when bubbles form on tops of pancakes. Yields about 10 pancakes.

CANDIED SWEET POTATOES

My mother's recipe - good for Thanksgiving dinner.

Ingredients:

  • 6 sweet potatoes
  • ½ cup brown sugar
  • ¼ cup water
  • 3 tbsp butter

Putting it together:

Cook potatoes. Boil sugar & water together 3 minutes. Add butter - stir till melted and then pour over potatoes. Bake 400 degrees for 30 minutes.

CHOCOLATE CHERRY CAKE

Ingredients:

  • 1 Devils Food cake mix
  • 21 oz can pie filling
  • 1 tsp almond extract
  • 2 eggs, beaten

Mix all together by hand. Bake 350 degrees. 10X15 pan - 20-30 mins OR 9X13 pan - 25-30 mins.

    FROSTING
  • 1 cup sugar
  • 5 tbsp oleo
  • 1/3 cup milk

Boil 1 minute. Remove from heat - add 1 cup chocolate chips. Pour over warm bars.

Ingredients:

  • 2 cups rolled oats
  • 1¾ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup (1 stick) butter or margarine
  • 1 cup brown sugar
  • ½ cup sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1 cup nuts
  • 1 pkg chocolate chips (2 cups) ( I use about a cup more)

Putting it together:

Grind oats - add flour, soda & salt & blend. Beat butter & sugars - then add eggs & vanilla. Mix in dry ingredients. Stir in chips & nuts. Bake at 375 degrees - 10-12 minutes. Do not overbake.

Chocolate Pudding

Ingredients:

  • ¼ cup sugar
  • 6 tbsp corn starch
  • ¼ tsp salt
  • 4 cups milk
  • 2 squares unsweetened chocolate
  • 1 tsp vanilla

Putting it together:

Cut chocolate into small pieces & melt in heavy pan. Add dry ingredients. Stir with a little of the milk, till smooth. Add rest of milk & stir & cook till thick. Add vanilla.

This is so good. Everyone in the family loved it. No box puddings for us. :o)

Coca Cola Cake

Ingredients:

  • 1 pkg white cake mix
  • 1 cup regular cola
  • 2 eggs
  • ½ cup buttermilk
  • ½ cup margarine, melted
  • ¼ cup baking cocoa
  • 1 tsp vanilla
  • 1½ cups miniature marshmallows
    FUDGE FROSTING
  • ¼ cup baking cocoa
  • ½ cup margarine, cubed
  • 1/3 cup regular cola
  • 4 cups confectioners' sugar

Putting it together:

In a large mixing bowl, combine the first seven ingredients. Beat on medium speed for 2 minutes. Fold in marshmallows. Pour into a greased 13X9X2 baking pan. Bake at 350 degrees for 35-40 minutes or till a toothpick inserted near the center comes out clean. Cool on a wire rack for 15 minutes.

Meanwhile, for frosting, combine cocoa & margarine in a saucepan. Cook over low heat till margarine is melted. Stir in cola till blended. Bring to a boil, stirring constantly. Remove from hear; stir in confectioners' sugar till smooth. Spread over cake. Let stand for 20 minutes before cutting.

This makes a very large batch of frosting. I think half a recipe is enough for one cake.

CROCK POT PIZZA

Ingredients:

  • 1½ lbs. ground beef
  • 1 (12 oz) pkg. Kluski noodles
  • 1 chopped onion
  • 1 chopped green pepper (optional)
  • 1 (14 oz) jar pizza sauce
  • 1 (14oz) jar spaghetti sauce (I use 2 jars pizza sauce)
  • 8 oz cheddar cheese
  • 8 oz mozzarella cheese
  • 1 small pkg. Pepperoni

Putting it together:

Cook & drain noodles. Brown ground beef with onion & green pepper, drain. Add sauces to meat & simmer well. Layer meat sauce, noodles, cheeses & pepperoni (repeat layering)

Turn crock pot on low for 1 hour, then high for 30 minutes. Or you can also cook on low for 2 to 3 hours. Just make sure cheeses are melted & mixture is good and hot.

Fruit Pudding

? I have had this recipe for a long time

Ingredients:

  • ¼ cup soft margarine
  • ½ cup sugar
  • 1 cup sifted flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • 1 No. 2 can drained fruit (I use cherries)
  • 1 cup fruit juice

Putting it together:

Cream margarine & sugar together. Sift flour, baking powder & salt & stir into first mixture alternately with milk. Beat till smooth. Pour into greased 8 in. square pan. Spoon the drained fruit over the top. If desired, sprinkle ¼ - ½ cup sugar over the fruit, depending upon how sweet you like it. Pour fruit juice over the top & bake 45-50 minutes in 375 degree oven till top springs back when lightly touched. Serve with cream, whipped cream, or ice cream.

FUDGE NUT BARS

Ingredients:

  • 1 cup margarine
  • 2½ cups sifted flour
  • 2 cups brown sugar
  • 1 tsp soda
  • 2 eggs
  • 1 tsp salt
  • 2 tsp vanilla
  • 3 cups quick rolled oats, uncooked
    FUDGE NUT FILLING
  • 1-12 oz pkg semisweet chocolate chips
  • 1 can sweetened condensed milk
  • 2 tbsp margarine
  • ½ tsp salt
  • 1 cup nuts
  • 2 tsp vanilla

Putting it together:

Cream together margarine & sugar. Mix in eggs & vanilla. Sift together flour, soda & salt. Stir in rolled oats. Add dry ingredients to creamed mixture. Set aside while you make filling.

In a microwave safe bowl, microwave chips, condensed milk, margarine & salt. Stir till mixture is smooth. Stir in nuts & vanilla. Spread 2/3 of oatmeal mixture in a greased jelly roll pan. Cover with chocolate mixture. Dot with remainder of oatmeal mixture & swirl over filling. Bake at 350 degrees for 25-30 minutes.

Although this is called fudge nut bars I do not put nuts in because my family does not like nuts. It would be much better with nuts :o).

GRAHAM CRACKER BARS

My recipe - a family favorite

Ingredients:

  • 32 graham crackers, crushed
  • 1 can Eagle Brand condensed milk
  • 1 cup semi-sweet chocolate chips

Putting it together:

Mix all ingredients together (will be really sticky). Spread in a 9X13 buttered pan. Bake at 325 degrees for 18 minutes. Time will vary with different ovens. Watch closely - do not overbake.

I don't always use Eagle Brand milk. I use a cheaper brand much of the time.

Hash Brown Casserole

Ingredients:

  • 2 cans (10-3/4 oz each) condensed cream of potato soup, undiluted
  • 1 cup sour cream
  • ½ tsp garlic salt
  • 1 pkg (2 pounds) frozen hash brown potatoes
  • 2 cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese

Putting it together:

In a large bowl, combine the soup, sour cream and garlic salt. Add potatoes and cheddar cheese; mix well. Pour into a greased 13X9X2 in. baking dish. Top with Parmesan cheese. Bake, uncovered at 350 degrees for 55-60 minutes of till potatoes are tender. Yield: 12-16 servings.

HOLIDAY RIBBON GELATIN

Ingredients:

  • 2 (3 oz each) packages lime jello
  • 5 cups boiling water, divided
  • 4 cups cold water, divided
  • 1 pkg (3 oz) lemon jello
  • ½ cup miniature marshmallows
  • 1 pkg (8 oz) cream cheese, softened
  • 1 cup mayonnaise
  • 1 can (8oz) crushed pineapple, undrained
  • 2 (3 oz each) packages cherry jello

Putting it together:

Dissolve lime jello in 2 cups boiling water. Add 2 cups cold water; stir. Pour into a 13X9X2 dish; refrigerate till set.

Dissolve lemon jello in 1 cup boiling water. Stir in marshmallows till melted. Cool for 20 minutes. In a small mixing bowl, beat cream cheese and mayonnaise till smooth. Gradually beat in lemon jello. Stir in pineapple. Carefully spoon over the lime layer. Chill till set.

Dissolve cherry jello in 2 cups boiling water. Add the remaining cold water; stir. Spoon over the lemon layer. Refrigerate overnight. Cut into squares. Yield: 12-15 servings.

Ingredients:

  • 6 tbsp margarine
  • 1/3 cup cocoa
  • 2 cups powdered sugar
  • 1 cup evaporated milk

Putting it together:

Melt butter in sauce pan. Add sugar & cocoa & mix well. Add milk gradually, beating till smooth. Bring to a boil over medium heat & cook, stirring constantly, about 2 minutes, or till thick. May store in refrigerator & reheat over hot water (or in microwave oven) before serving.

ICY HOLIDAY PUNCH

Ingredients:

  • 1 pkg (6 oz) cherry jello
  • ¼ cup sugar
  • 2 cups boiling water
  • 1 can (46 oz) pineapple juice
  • 6 cups cold water
  • 2 liters ginger ale, chilled
  • Putting it together:

    In a 4 qt freezer-proof container, dissolve gelatin and sugar in boiling water.Stir in pineapple juice and cold water. Cover and freeze overnight. Remove from the freezer 2 hours before serving. Place in a punch bowl; stir in ginger ale just before serving. YIELD: 32-36 servings.

    JERKY RECIPE

    Ingredients:

    • 12 pounds boned meat sliced 1/8 to ¼ inch thick
    • 16 oz soy sauce
    • 8 oz liquid smoke
    • 8 oz water
    • ¾ tsp onion powder
    • ¾ tsp garlic powder
    • 4 tsp hot sauce
    • 2-3 cups brown sugar

    Putting it together:

    Soak meat 12 to 24 hours in mixture, then put on food dehydrator trays, season with lemon pepper, or coarse black pepper, or other seasonings that best suit you. I sifted brown sugar over mine. The more brown sugar you use, the more "sugar cure" flavor you will get. Dry for ? hours. Sherri said she thinks about 16 hours.

    Lemon Cheesecake

    Ingredients:

    • 1 (8 oz.) pkg. cream cheese
    • 2 c. milk
    • 1 pkg. lemon instant pudding mix
    • 1 (8") graham cracker crust
    • 1 ctn. Cool Whip (or equivalent)
    • additional graham cracker crumbs for topping

    Putting it together:

    Stir cream cheese until smooth, blend in ½ cup milk, then add rest of milk and pudding mix. Beat slowly for 1 minute. Pour into crust. Top with Cool Whip and graham cracker crumbs.

    LEMON POPPY SEED CAKE

    An easy recipe I found in a paper.

    Ingredients:

    • 1 pkg lemon cake mix
    • 1 pkg instant lemon pudding mix
    • 4 eggs
    • ½ cup oil
    • 1 cup water
    • 1 tbsp poppy seeds

    Putting it together:

    Combine first 5 ingredients. Mix & pour into 2 wax paper lined loaf pans. Sprinkle poppy seeds over top. Bake at 350 degrees for 40-45 minutes.

    M & M Bars

    Ingredients:

    • 1 cup margarine, softened
    • ¼ cup granulated sugar
    • ¼ cup brown sugar
    • 1 box instant pudding, vanilla or chocolate
    • 1 tsp vanilla
    • 2 eggs
    • 2¼ cups flour
    • 1 tsp baking soda
    • 1 cup chocolate chips (6 oz)
    • ¼ cup M & M's
    • 1 cup chopped nuts, optional

    Putting it together:

    Combine margarine, sugars, pudding mix and vanilla in large bowl. Beat till creamy. Beat in eggs. Gradually add flour and baking soda. Stir in chips, nuts and a few M & M's. Put in 9X13 pan and top with rest of M & M's. Bake 20-25 minutes in greased pan at 350 degrees. Batter will be very stiff.

    MAIDRITES

    I found this recipe in a newspaper.

    Steam together 3 lbs. ground beef and 1 onion. Add 1 can chicken broth. Simmer till liquid is absorbed. Serve with buns.

    Ingredients:

    • 2 lb hamburger
    • 2 eggs
    • 2/3 cups milk
    • 1 tsp salt
    • ¼ tsp pepper
    • ¼ cup quick oatmeal
    • 1 small chopped onion
      SAUCE
    • ¼ cup ketchup
    • ¼ cup brown sugar
    • 1 tbsp mustard

    Putting it together:

    Combine meat, eggs, milk, salt, pepper, oatmeal and onion. Put into pan. Combine sauce ingredients. Spread over the top of meatloaf. Bake at 350 for 1 hour.

    MOM'S MACARONI AND CHEESE

    Ingredients:

    • 1½ cups uncooked macaroni
    • 5 tbsp margarine, divided
    • 3 tbsp flour
    • 1½ cups milk
    • 1 cup shredded cheddar cheese
    • 2 oz process American cheese, cubed
    • ½ tsp salt
    • ¼ tsp pepper
    • 2 tbsp dry bread crumbs

    Putting it together:

    Cook macaroni according to package directions; drain. Place in a greased 1½ qt. baking dish; set aside. In a saucepan, melt 4 tbsp butter over medium heat. Stir in flour till smooth. Gradually add milk; bring to a boil. Cook and stir for 2 minutes; reduce heat. Stir in cheeses, salt and pepper till cheese is melted. Pour over macaroni; mix well. Melt the remaining butter; add the break crumbs. Sprinkle over casserole. Bake, uncovered, at 375 degrees for 30 minutes.

    MY FAVORITE CHILI

    Found in a magazine

    Ingredients:

    • 1 lb. ground beef
    • 1 pkg chili seasoning mix
    • ½ cup water
    • 1 (1 lb.) can tomatoes
    • 1 (15 oz) can kidney beans

    Steam ground beef in large pan. Drain off excess fat. Stir in chili seasoning mix, water, tomatoes & kidney beans. Bring to a boil; reduce heat & simmer for 10 minutes. Makes 4-6 servings. I usually double this recipe.

      CHILI SEASONING MIX
    • 3 tbsp flour
    • 2 tbsp instant minced onion
    • 1½ tsp chili powder (or amount to your taste)
    • ½ tsp ground cumin
    • ½ tsp crushed red pepper (I use less)
    • 1 tsp salt
    • ½ tsp instant minced garlic (or amount to your taste)

    My Mother's Bread

    From my mother - she baked this bread every week

    Ingredients:

    • 2 pkgs yeast
    • 2 tbsp salt
    • 4 cups liquid
    • 12 - 12½ cups flour
    • 4 tbsp sugar
    • 4 tbsp shortening

    Putting it together:

    In large mixing bowl dissolve yeast in liquid. Stir in sugar & salt & let stand till thoroughly dissolved, about 5 minutes. Sift & measure flour. Add ½ of it. Beat with spoon till almost smooth & very elastic. Beat in melted & cooled shortening. Add most of remaining flour and work it in with the hand till dough is possible to handle. Mix well, to tighten up, then knead till smooth & elastic. Round up & set to rise in a greased bowl till double in bulk, about 2 hours. Punch down dough. Round up & set to rise again till not quite double in bulk, about 45 minutes. Punch down dough. Divide for loaves. Round up each part, cover and let rest 15 minutes. Mold into 4 loaves. Put into greased loaf pans. Cover with a damp cloth & let rise till sides of dough have reached top of pan & center is well rounded above. Bake at 350 degrees for 1 hour.

    MY MOTHER'S MEAT LOAF

    This is the recipe my mother used while I was growing up. YUM

    Ingredients:

    • 2 lbs. hamburger
    • ½ cup chopped onion
    • 2 tbsp prepared mustard
    • 1 cup dry bread crumbs
    • 1 tbsp salt
    • ½ tsp baking powder
    • 2 eggs, well beaten
    • 1¼ cups milk

    Putting it together:

    Mix and bake in 375 oven for 1 hour.

    NOODLE RICE PILAF

    Ingredients:

    • ¼ cup margarine
    • 1 cup long grain rice
    • ½ cup uncooked fine egg noodles or vermicelli
    • 2¾ cups chicken broth
    • 2 tbsp minced fresh parsley

    Putting it together:

    In a saucepan, melt butter. Add the rice and noodles; cook and stir till lightly browned, about 3 minutes. Stir in broth; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or till broth is absorbed and rice is tender. Stir in parsley.

    I finally found a rice recipe I like. This does make a very large amount so it would probably be a good idea to cut it in half.

    OVEN-ROASTED POTATOES

    Taste of Home magazine

    Ingredients:

    • 4 baking potatoes
    • 2 tbsp margarine, melted
    • 2 tsp paprika
    • 1 tsp salt
    • ½ tsp pepper

    Putting it together:

    Peel potatoes and cut into large chunks; place in a shallow 2-qt. baking pan. Pour margarine over and toss till well coated. Sprinkle with paprika, salt and pepper. Bake, uncovered, at 350 degrees for 45-60 minutes or till potatoes are tender.

    You can scrub potatoes and not peel. Very good and easy.

    Overnight Cinnamon Rolls

    My sister, Burnita

    Ingredients:

    • 1 pkg yeast
    • 3 cups water (med. hot)
    • ½ cup margarine
    • 1 cup sugar
    • 1 tsp salt
    • 2 eggs
    • 9-10 cups flour

    Putting it together:

    Mix together margarine, two cups water, sugar & salt - Mix till margarine is melted. Let cool. Beat eggs. Dissolve yeast in 1 cup water. Mix all ingredients together. Add flour ½ at a time, stir well. Start at 4 p.m. Let set till 6 p.m. Then punch down every hour till 10 p.m.

    Roll out & spread with butter, sugar & cinnamon. Cut and put into pans. Cover pans loosely with waxed paper & let set on counter overnight. In morning bake in 350 degree oven. Makes 3 9X13 pans.

    To make the good sticky topping you like - before putting rolls in pans - in each pan put ½ cup melted margarine. Stir in 1 cup brown sugar and ½ cup whipping cream. Mix well and place rolls on top.

    PAN BURRITOS

    Taste of Home magazine - very good

    Ingredients:

    • 2 pkg (1½ oz each) enchilada sauce mix
    • 3 cups water
    • 1 can (12 oz) tomato paste
    • 1 garlic clove, minced
    • ¼ tsp pepper
    • salt to taste
    • 2 pounds ground beef
    • 9 large flour tortillas (9 inch)
    • 4 cups shredded cheddar cheese or taco cheese
    • 1 can (16 oz) refried beans, warmed
    • taco sauce, sour cream, chili peppers, chopped onion, salsa

    Putting it together:

    In a saucepan, combine first six ingredients; simmer for 15-20 minutes. In a skillet, brown the beef. Drain; stir in 1/3 of the sauce. Spread another third on the bottom of a greased 13X9X2 in baking dish. Place three tortillas over sauce, tearing to fit bottom of dish. Spoon half of meat mixture over tortillas; sprinkle with 1-1/2 cups of cheese. Add three more tortillas. Spread refried beans over tortillas; top with remaining meat. Sprinkle with 1½ cups of cheese. Layer remaining tortillas; top with the remaining sauce. Sprinkle with remaining cheese. Bake, uncovered, at 350 degrees for 35-40 minutes. Let stand 10 minutes before cutting. Serve with taco sauce, sour cream, chili peppers, chopped and salsa, if desired.

    Yield: 8-10 servings

    PARTY MIX

    Ingredients:

    • 1 pkg taco seasoning mix - add to ½ cup melted oleo
    • chex cereal
    • shoe string potatoes
    • peanuts
    • 6 oz french fried onions
    • pretzels
    • bugels
    • small crackers

    Putting it together:

    Mix and pour seasoning mix over - put in pans and put in oven at 300 degrees for 25 minutes - stir every 10 minutes. Cool and put in containers.

    PARTY POTATOES

    Found this recipe in a magazine. One of our favorites.

    Ingredients:

    • 8 or 10 potatoes
    • 1 - 8 oz pkg cream cheese
    • 1 cup dairy sour cream
    • butter, paprika, chives, garlic salt

    Putting it together:

    Cook potatoes, drain. Beat sour cream & cream cheese till blended. Add hot potatoes gradually, beating till light & fluffy. If too stiff, add a little milk. Season to taste with garlic salt. Add chives. Spoon potatoes into casserole. Dot with butter, sprinkle with paprika. Can be refrigerated several days before using, then just put into 350 degree oven & bake one hour. If not refrigerated, 30 minutes is enough.

    PEANUT CLUSTERS

    Melt in double boiler: 12 oz pkg chocolate chips and1 large Hershey bar.

    Add 2 cups peanuts. Drop by spoonful onto waxed paper.

    POPPY SEED BREAD

    From a magazine. Kristen's favorite.

    Ingredients:

    • 1¼ cups warm water
    • 2 tsp salt
    • 1 pkg active dry yeast
    • 3-3½ cups unsifted flour
    • 2 tbsp softened margarine
    • 1 egg white
    • 2 tbsp poppy seeds
    • 1 tbsp cold water
    • 2 tbsp sugar
    • Additional poppy seeds

    Putting it together:

    Measure warm water into large bowl. Sprinkle in yeast; stir till dissolved. Add margarine, 2 tbsp poppy seeds, sugar & salt. Stir in 2 cups flour. Beat till well blended, about 1 minute. Stir in enough additional flour to make a soft dough. Cover; let rise till doubled in bulk, about 35 minutes.

    Stir down, spread evenly in greased 9X5X3 loaf pan. Cover; let rise till doubled in bulk, about 40 minutes.

    Combine egg white & water; carefully brush on top of loaf. Sprinkle with poppy seeds. Bake at 375 about 45 mins. Remove from pan & cool on wire rack.

    POTATO CHEESE SOUP

    My recipe from a magazine

    Ingredients:

    • 3 cups diced potatoes
    • 1 cup water
    • ½ cup diced celery
    • ½ cup diced carrots
    • ¼ cup chopped onion
    • salt & pepper
    • 1 tsp parsley flakes
    • 1 chicken bouillon cube
    • 1½ cups milk
    • 2 tbsp flour
    • ½ lb processed cheese, cubed

    Putting it together:

    Cook all, except last 3 ingredients, in a large saucepan for 15-20 minutes. Add milk to flour and blend well. Then add to vegetables, cooking till thickened. Add cheese . Stir till melted. If you want thicker soup, add a little more flour.

    I don't use as much cheese as the recipe calls for.

    PRETZEL CANDIES

    Recipe from Robbi. So easy and SO good.

    Put pretzel rings on greased cookie sheet.

    In each ring put a candy kiss.

    Bake 2-3 minutes in 275 degree oven.

    Take out of oven & make sure chocolate touches pretzel.

    Press an M&M in each kiss.

    Put in refrigerator for 10-15 minutes.

    PUMPKIN BREAD

    Ingredients:

    • 3½ cups flour
    • 2 tsp soda
    • 1½ tsp salt
    • 1 tsp cinnamon
    • 1 tsp nutmeg
    • 3 cups sugar
    • 1 can pumpkin (2 cups) - #303 can
    • 1 cup oil
    • 4 eggs
    • ½ cup water

    Putting it together:

    Mix all ingredients & divide in 3 loaf pans. Bake for 1 hour in 350 degree oven.

    PUMPKIN PIE

    Ingredients:

    • 1-1/8 - 1¼ cups pumpkin
    • 1 cup brown sugar
    • 1 tsp cinnamon
    • ½ tsp ginger
    • ½ tsp allspice
    • ½ tsp salt
    • 1 tbsp flour
    • 2 eggs
    • 1 cup milk
    • ½ cup cream
    • 1 tsp vanilla

    Putting it together:

    Mix spices, flour, salt & sugar - add the pumpkin. Add slightly beaten eggs, milk, cream & vanilla. Bake at 400 degrees 1 hour.

    The temperature depends on your oven. I bake mine at 375 degrees.

    RED HOT JELLO SALAD

    Old favorite of mine

    Dissolve ¼ cup red hot candies and 1 small box strawberry jello in 1 cup boiling water. Add 1 cup applesauce - stir well. Add ½ cup cold water. Pour into serving dish.

    Can easily be doubled.

    RICE KRISPIES SQUARES

    Found in a magazine
      Bring to a boil
    • 1 cup karo
    • 1 cup white sugar
      Add:
    • 1 cup peanut butter
    • 6 cups rice krispies

    Put in buttered 9X13X2 pan.

      Melt:
    • 1 cup chocolate chips
    • 1 cup butterscotch chips

    Spread on ingredients in pan. Place in refrigerator till set.

    The parishioners of St. Joseph's Catholic Church in What Cheer, Iowa, published this collection of recipes in 1992, the centennial of the church. This cookbook contains both old cherished family recipes and "new" recipes. Sadly, the church is now gone. Happily, the cookbook endures.

    SALSA

    From Van & Bonnie program

    Ingredients:

    • 20 cups skinned, chopped tomatoes (or puree in blender)
    • 8 cups chopped onions
    • 3 green bell peppers, chopped
    • 7 yellow banana peppers, chopped*
    • 5 garlic cloves, chopped, (or equiv. amount of minced garlic)
    • 8 jalepeno peppers, chopped*
    • 1¼ cups sugar
    • 4 tbsp chili powder
    • 5 tbsp salt
    • 2½ cups white vinegar
    • 4 tsp cayenne pepper
    • 1½ cups corn starch

    Putting it together:

    *wear gloves when chopping these as they will burn!

    Reserve 2 cups of tomato puree and add corn starch with wire whip. Set aside.

    Combine remaining ingredients in large kettle. Cook on low or medium heat about 20 minutes or till tender.

    Slowly add corn starch and tomato mixture. Stir in well, making sure there are no lumps. Cook over low to medium heat till desired thickness.

    Makes 13-15 pints.

    SCALLOPED CORN

    Ingredients:

    • 4 cups fresh or frozen corn
    • 3 eggs, beaten
    • 1 cup milk
    • 1 cup crushed saltines (about 30 crackers), divided
    • 3 tbsp margarine, melted
    • 1 tbsp sugar
    • 1 tbsp finely chopped onion
    • salt & pepper to taste

    Putting it together:

    In a large bowl, combine the corn, eggs, milk, ¾ cup cracker crumbs, margarine, sugar, onion, salt & pepper. Transfer to a greased 1½ qt. baking dish. Sprinkle with remaining cracker crumbs. Bake, uncovered, at 325 degrees for 1 hour or till a knife inserted near the center comes out clean.

    Yield: 6 servings

    SLUSH

    Has been in my family for a long time. Very good.

    Ingredients:

    • 6 oz frozen limeade
    • 6 oz frozen lemonade
    • 3 cans water
    • ¼ cup sugar
    • 1 cup vodka

    Mix & freeze. Stir to serve. Put a large scoop in a glass & fill with 7-up.

    STEAK SOUP

    Burnita Hammes - Uncle Jerome's sister

    Ingredients:

    • 2 sticks margarine
    • 2 cups flour
    • 10 cups water
    • ½ tsp pepper
    • 2 tsp Accent
    • 3 tsp Kitchen Bouquet
    • 2 tbsp beef base
    • 2 cans Bisque of tomato soup

    Mix flour & part of water till smooth. Add all above ingredients & cook, stirring frequently till thick.

    • 1 cup carrots (cubed)
    • 1 cup onion, chopped
    • 1 cup celery (coarsely diced)
    • 1 large pkg frozen mixed vegetables.

    Parboil above ingredients. Brown or steam 3 lbs. hamburger. Combine all ingredients and simmer. Additional vegetables may be added if desired. This recipe makes a large quantity and freezes well.

    If I don't have Bisque of tomato soup I use plain tomato soup.

    Sunday Brunch Casserole

    Ingredients:

    • ½ pound sliced bacon
    • ½ cup chopped onion
    • ½ cup chopped green pepper
    • 12 eggs
    • 1 cup milk
    • 1 pkg (16 oz) frozen hash brown potatoes, thawed
    • 1 cup shredded cheddar cheese
    • 1 tsp salt
    • ½ tsp pepper

    In a skillet, cook bacon till crisp. Remove with a slotted spoon; crumble & set aside. In the drippings, saute onion & green pepper till tender; remove with a slotted spoon. Beat eggs & milk in a large bowl. Stir in hash browns, cheese, salt, pepper, onion, green pepper & bacon. Transfer to a greased 13X9X2 in. baking dish. Bake, uncovered, at 350 degrees for 35-45 minutes or till a knife inserted near the center comes out clean.

    Sweet n Spicy BBQ Sauce

    Ingredients:

    • 2 cups packed brown sugar
    • 2 cups catsup
    • 1 cup water (or less)
    • 1 cup cider vinegar
    • 1 cup finely chpped onion
    • 1 can (8 oz) tomato sauce
    • 1 cup corn syrup
    • 1 cup molasses
    • 1 can (6 oz) tomato paste
    • 2 tbsp Worcestershire sauce
    • 1 tbsp garlic-pepper blend
    • 1 tbsp liquid smoke, optional
    • 1 tbsp prepared mustard
    • 1 tsp onion salt
    • 1 tsp celery salt

    In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat, simmer uncovered, for 15 minutes or till flavors are blended. Remove from heat - cool. YIELD - about 2 quarts.

    TORTELLINA SOUP

    From St Mary's cookbook - Cleta Pitts

    Ingredients:

    • 1 pkg tortellini noodles with cheese or meat
    • 3 (14½ oz.) cans chicken broth
    • 2 cans chunky tomato (pasta style Del Monte Italian)
    • 3 cans minestrone soup
    • 1 lb. Italian sausage

    Cook sausage; drain and add to soups. Simmer all 15-20 minutes to flavor good. Add 1½ cans of hot water. Add the tortellini and simmer 20-30 minutes more. Freezes well.
